Mocha Pudding
Naturally Green Pancakes:
Ingredients:
2 whole eggs
1/2 cup butter
1/2 cup unsweetened applesauce (preferably homemade)
1/2 tsp baking soda
1/2 tsp vanilla extract
1/4 tsp ground nutmeg
1/2 tsp coconut oil - for frying
Directions:
1.) Heat oven 200 degrees
2.) Beat eggs with hand mixer. Add all other ingredients until smooth.
3.) Melt a little coconut oil in a griddle or a flat bottom skillet over medium heat.
4.) Scoop about 1/4 cup of batter onto the griddle for each pancake.
5.) Allow cook for a couple of minutes or until the center of the pancake starts to bubble.
6.) Flip and cook for another few minutes.
7.) Place in the oven for 20-30 minutes. This allows the pancakes to turn green.
***Pancakes will not turn green right away, so do not panic if you think it is not working!
Irish Cream Mocha Pudding:
Ingredients:
1/3 cup chia seeds
13 1/2 ounces Coconut - Full Fat
2 tbsp. raw cocoa powder
4 1/2 tbsp. coconut palm sugar (reserve 1.5 tbsp. for later step)
3 tsp pure vanilla extract (reserve 2 tsp for later step)
1 1/2 tsp strongly brewed coffee (reserve 1/2 cup for later step)
13 1/2 fl oz. Coconut Cream
Directions:
1.) Pop can of coconut cream into fridge
2.) Use high power blender to crush chia seeds into a fine powder.
3.) Blend in coconut milk, 2 tbsp. cocoa powder, 3 tbsp. coconut sugar, 1 tsp vanilla, and 2 tsp coffee until smooth.
4.) Scoop into containers of your choice. Fill 4-6 depending on size of jar. Chill for 1 hour.
5.) Scoop cream from the top of the chilled coconut cream can.
6.) With a mixer, combine cream, 1.5 tbsp. coconut sugar, 2 tsp vanilla and 1/2 tsp coffee until well combined.
7.) Put Irish cream on top of the chia pudding.
